Spiced up chicken salad al la Lexa
This chicken salad is one of my latest recipes. It is a fact that I almost never make anything the same way twice so…I have started to attempt to track and log recipes. I used a Rotisserie Chicken and cut it into chunks. I added one medium Red Delicious and one small Granny Smith (green apples for tartness). (I didn’t have any Golden Delicious apples to add another layer of sweetness.) I added 1 & 1/2 cups of Miracle Whip Salad Dressing and two de-stalked fresh tarragon leaves (about 3 T), Old Bay seasonings and parsley and 1/2 cup of orange juice. Added fresh herbs (as opposed to dried) makes it bursting with freshness Mix, chill and spread on a toasted onion buns and you have a perfect sandwich for say a flight from FL to CA…just a thought.
